As I try to stay away from gluten and yeast,
bread is a no no for me, and I love bread.
I try to find yummy alternatives, so when I came across a recipe for Sweet potato toast,
yes, what an unexpected combination, yet so brilliant, I was curious.
Sweet potato is high in B6, good source of vitamin C and D,
contain iron, magnesium and beta carotene.
Cut the potato in slices,
then put in your toaster,
possibly need to repeat a few times for it to become done.
My favorite topping is cut tomatoes and avocados
with basil, olive oil and balsamic vinegar,
a very satisfying breakfast toast.
