Purslane is usually used as a super easy to grow ornamental plant, but in addition it is a great source of vitamins A, C and E, and the richest known plant source of omega 3 fatty acids. Purslane has plenty of magnesium, and helps fight chronic fatigue syndrome, and headaches. The plant even contains lithium, a mood stabilizing compound that helps ease depression. Pick a few flowers, leaves and stems for your sallad. Juice from the plant leaves soothe burns, insect bites and stings, and ear aches. For cosmetic uses it is an excellent skin cleanser and astringent, and may be helpful in treating acne and wrinkles.
