Amazing blend of dried herbs, the taste and smell reminds me of a flowering meadow in dancing sunlight. Instead for Herbs de Provence I would name it "Summer in a jar" with its mix of Basil, Rosemary, Thyme, Parsley, Marjoram, Lavender, Tarragon and Fennel seed. Make sure to get an organic blend where the parts still are clearly defined, preferably you can see the purple flowers of the Lavender.
BASIL (Ocimum basilicum) is an anti bacterial, anti inflammatory and tasty plant - I LOVE pesto. (Basil is an excellent source of vitamin K and a very good source of iron, calcium and vitamin A. In addition, Basil is a good source of dietary fiber, manganese, magnesium, vitamin C and potassium).
ROSEMARY (Rosmarinus officials) contains substances that are useful for stimulating the immune system, increasing circulation, and improving digestion. In addition, Rosemary has been shown to increase the blood flow to the head and brain, improving concentration (Rosemary is a good source of the minerals iron and calcium, as well as dietary fiber).
THYME (Thymus) has anti bacterial activity against a host of different bacteria and fungi. Staphalococcus aureus, Bacillus subtilis, Escherichia coli and Shigella sonnei to name a few.
Our old and dear friend PARSLEY (Petroselinum hortense) is a good source of vitamin A, C, iron and folic acid, one of the most important B vitamins.
MARJORAM (Origanum majorana) in ancient Greece believed to be a symbol of peace, harmony and happiness contains many nutrients and is antibacterial and anti-inflammatory.
LAVENDER (Lavandula) for treating cold, influenza or fever; Lavender vinegar is a very handy remedy, also recommended for rheumatism massages; put two handfuls of mixed lavender flowers, mint and sage leaves, rose and juniper petals in one liter of wine vinegar, leave it in a warm and dark place for 7 days, filter and add vinegar until the one liter mark is reached again.
FENNEL SEEDS (Foeniculum vulgare) a rich source of vitamin C, fibers, manganese, potassium, magnesium, calcium, iron, vitamin B3 and very useful to the immune system.
TARRAGON (Artemesia dracunculus) is an excellent source of iron, calcium and manganese, has relaxing properties and promotes calmness which will help in cases of insomnia, stomach cramps and menstrual cramps, also a laxative and detoxifier,
